Ordering Hakata Tonkotsu Like a Regular & Cutting Rich Pork-Broth Salt
Fukuoka is the birthplace of milky pork-bone tonkotsu ramen served with ultra-thin straight noodles that soften fast. Locals usually call out "katame" (slightly firm) when ordering, and if you want a ¥150 "kaedama" noodle refill, flag the staff when at least one-third of your broth is still in the bowl—once you drink the soup dry, you cannot order extra noodles. Pair at least one dinner with bubbling garlic-chive "motsunabe" (plump beef small-intestine hotpot, finishing with champon noodles soaked in the broth) and bite-sized Hakata crispy gyoza.
Authentic non-chain Hakata ramen shops (you will smell the funky boiled pork bone half a block away!) and miso/soy motsunabe pots run seriously rich and salty. Ask for "Aji usume" (less salty seasoning) at ramen counters if heavy sodium hits you hard, keep a 500ml bottle of water or cold black oolong tea in your bag all afternoon, and balance rich dinners with a lighter mentaiko-and-rice breakfast.
Cannot book a solo dinner spot at a motsunabe restaurant requiring a 2-person minimum? Hakata Station’s basement "ほろよい通り (Horoyoi Street)" has counter-seat motsunabe sets built specifically for solo diners.
